Gourmet Experience in the Truffle Valley

An incredible tour through the Apennines. We will en- joy this splendid scenery with beautiful landscapes. We will combine nature with typical food and we will discover the exquisite truffles. We’ll discover the flavours of Emilia Romagna during this journey with spe- cial cooking classes. A Michelin Star Chef will prepare fantastic gourmet dinners every evening, accompanied by different wine every course. We will also see the Castle and the fortress of Vignola. The name “Vignola” comes from the Latin “vineola”, meaning “tiny vineyard”. The town banner still includes this symbol. In the end we will visit the beautiful Abbey of Monteveglio founded by Matilda of Canossa.

Arrive in Bologna airport and a private trans- fer will take us to Vignola famous for its cherries and for its castle full of history and architectural remains of great value. Short transfer to “Acetaia Cà dal Non” for guided visit to the old vinegar factory of Aceto Balsamico Tradizionale di Modena, with tasting and light lunch. Short transfer to Savigno, free time to visit this delightful town, gourmet dinner and overnight in Locanda Amerigo.

After breakfast short transfer to Monteveglio for visit the old Abbey founded by Matilda of Canossa between the eleventh and twelfth centuries. After that we will visit the organic vinery of Agriturismo Corte d’Aibo and we will have a light lunch.Transfer to the hotel for a interesting cooking class with one star Michelin Chef, specialized in tradition cuisine of Emilia Romagna with one standard cooking class (bread, pasta and pastry) and one seasonal (truffle and wild game). We will learn cooking techniques and authentic recipes that have been handed down for centuries. Of course we will eat our own preparations. Each course will have a different wine. It will be a relaxing,enjoyable and fun experience. Dinner and overnight in Locanda Amerigo.

We will start our day with short transfer to Rosola di Zocca where we will visit the Parmigiano Reg- giano Factory and tasting sessions. We will see the cheese masters at work repeating the ancient gestures to process milk. A special way to get into the production culture of this area and to discover how a true Parmigiano Reggiano is made. After that we will visit the Chestnut Museum and Borlengo Museum. Here we will have a simple cooking class and we will learn how to make the “borlenghi” – a traditional food that is part of the Panaro Valley culture. It was originally made with flour and water, however, as time has passed, additional ingredients have been add- ed such as salt, lard, rosemary, garlic and Parmigiano Reggiano cheese. In the afternoon easy walk tour in search of truffles (only seasonal). Return to the hotel for truffle dinner and overnight.
